Roasted Beets begin with farm-fresh raw beets

Yesterday I picked up a bunch of beets at my favorite farm stand and I want to share with everyone my super easy roasted beets recipe. Beets are a great food, and when they’re cooked fresh they have a really sweet flavor. Once you make roasted beets you’ll never ever again eat the junk that comes in a can or jar.

One of the really cool things about beets is that the entire plant is edible. The star of the show is the beautiful red root, but the greens are also edible. I’ve used the greens in salads, and I’ve also used them in my Italian Greens recipe. Please don’t throw out the greens – you’ll be missing out on a lot of vitamins, minerals, natural fiber, and good carbs.

  • 3-4 fresh beets
  • 1/2 tsp Olive Oil
  • 1/4 tsp salt
  • Fresh ground pepper


  1. Preheat oven to 400 degrees
  2. Trim tops off beets, scrub well, halve, and cut into 1/4″ dice
  3. Toss diced beets with 1/2 tsp Olive Oil, 1/4 tsp salt, and a pinch of pepper.
  4. Place beets on a prepared baking sheet in a single layer.
  5. Roast 20-25 mins
  6. Set aside to cool

Roasted beets can be served as a side dish; they complement chicken or pork very well. They are also a great addition to a green salad. Don’t forget that the beet greens can also be added to your green salad (the smaller leaves are a little more tender than the full grown leaves).
